SUPER FOOD STIR FRY

This recipe is my own!  We love to stir fry food and I have a variety that I really enJOY.  This particular one just kind of happened!  Quite often I start my meals with onion, red, and green bell peppers.  And why not?!  They are both loaded with Vitamin A, C, potassium, folic acid, and fiber!  Who can't use a little of all of those goodies?!  


But I started with the three goodies and added asparagus because my husband was a big fan of it, and broccoli because I love it.  I added zucchini because it just sounded good and we both like it.  We ate it like that many times before I decided one day that I did not have eaten enough greens for the day.  So, I added spinach!  WOW!  It was the icing on the cake, so to speak!  Love it with the spinach!

 

This recipe is made with chicken, but our favorite way to eat it is with fresh shrimp.  It is REALLY GOOD with shrimp!

SUPER FOOD STIR FRY

½ organic yellow onion sliced

½ organic med or 1 small red bell pepper

½ organic med or 1 small green bell pepper

1  organic small to medium zucchini sliced or diced (as big or small as you desire)

½ c cooked organic broccoli florets (cooked to al dente in microwave about 3 minutes)

Handful of fresh organic baby spinach

½ package asparagus chopped (organic is very hard to find)

1 package natural (no hormones added) chicken tenders diced

Bragg’s alternative soy sauce

Cooked Organic Jasmine Rice or Frozen Organic Riced Cauliflower (whichever one you desire)

Salt (Optional – the soy sauce is salty, so may not need it)

Organic Cracked Black Pepper

Organic Garlic Powder

Organic Olive oil

        

Just a tip:   Organic is optional.  I prefer it because I am highly susceptible to pesticides.  And avoiding pesticides is the whole purpose of choosing organic products.  There are some products that I don't concern myself too much with being organic, such as onions and lemons.  But I choose organic as often as possible for not only the healthier, cleaner reasons, but I believe you can definitely taste the difference.  Just something to think about!  Hope it is helpful!


Sauté onions and bell peppers in olive oil in stainless steel pan and season to taste with seasonings.  Sauté till al dente.  Add zucchini and asparagus. And sauté till al dente. Season a little more to taste.  Add sauce as desired and let simmer for a few minutes.  Remove from pan. 

Sauté seasoned chicken in the pan.  When pink is gone, add sautéed veggies back to pan and stir.  Then add spinach.  Simmer until spinach is wilted.  Taste to see if you need more seasonings or possibly more sauce. 


See two starch options below that are paired with this meal:


Rice – Cook Jasmine rice per instructions while you are cooking the stir fry.  Most take about 15-18 minutes to cook.  And they are ready about the time you are done with the stir fry. (I learned from my Home Economics teacher in high school, Mrs. Sullivan, that it is called Dove Tailing when you cook your meals in a timely manner that everything is ready at the same time. Loved that class!)  In a bowl, serve the stir fry mixture over the top of the rice and sprinkle with parmesan!  Deeeelicious!


Riced Cauliflower – After adding the veggies back to the pan, add frozen riced cauliflower to stir fry mixture in the pan and stir until al dente.  Then add spinach until wilts.  Serve in bowl and sprinkle parmesan on top. Deeeelicious!
